Recipe: Fall Seasonal Salads
There’s nothing better than using seasonal produce to create a crunchy, creamy salad to satisfy your taste buds. Toss together any of these combinations for a flavorful fall feast.
SUBTLY SWEET:
Spring mix
Diced pear
Sliced red onion
Crumbled goat cheese
Crushed raw pecans
Dressing: drizzle with olive oil and champagne vinegar, salt to taste
KALE CRUNCH:
Shaved and massaged kale
Diced apple
Crumbled bacon
Crumbled feta cheese
Crushed raw pecans
Dressing: blend 2 tbsp olive oil with 1/2 cup Greek yogurt and 1/4 cup balsamic vinegar, salt & pepper to taste
HONEY ROASTED:
Spinach
Roasted and diced sweet potato or butternut squash
Sliced shallot
Pomegranate seeds
Crumbled goat cheese
Shelled and crushed pistachios
Dressing: mix 4 tbsp olive oil with 2 tbsp each of honey, white wine vinegar and Dijon
