Recipe: Fall Seasonal Salads

 

There’s nothing better than using seasonal produce to create a crunchy, creamy salad to satisfy your taste buds. Toss together any of these combinations for a flavorful fall feast.


 

SUBTLY SWEET:

  • Spring mix

  • Diced pear

  • Sliced red onion

  • Crumbled goat cheese

  • Crushed raw pecans

  • Dressing: drizzle with olive oil and champagne vinegar, salt to taste

KALE CRUNCH:

  • Shaved and massaged kale

  • Diced apple

  • Crumbled bacon

  • Crumbled feta cheese

  • Crushed raw pecans

  • Dressing: blend 2 tbsp olive oil with 1/2 cup Greek yogurt and 1/4 cup balsamic vinegar, salt & pepper to taste

HONEY ROASTED:

  • Spinach

  • Roasted and diced sweet potato or butternut squash

  • Sliced shallot

  • Pomegranate seeds

  • Crumbled goat cheese

  • Shelled and crushed pistachios

  • Dressing: mix 4 tbsp olive oil with 2 tbsp each of honey, white wine vinegar and Dijon
